I’ve already professed my love for brie cheese once, so when my girlfriend sent me this recipe I had to try it out. Seriously though, brie cheese and fresh warm peaches? That combination is destined to be delicious. Check this out because it turned out really well!

Delicious Fresh Peaches!

Pretty simple list of ingredients this time:

  • 1/4 pound of Brie Cheese, sliced thin(You may want more, its only going to make this taste even better)
  • 1/4 of a red onion, chopped small
  • 2 peaches cut into thin slices(we used two, one that was really ripe and kind of mushy and another one which was more firm. The firm one held up better and still tasted great which was nice, but the mushy one was juicier which really got the taste of peaches into the dish)
  • 1/2 tablespoon of butter
  • Some honey
  • Tortilla shells(We used the small 6 inch ones left over from the tostadas)

Get everything chopped up and then carmelize the red onions in a skillet. Red onions really get that sweet candy taste when you saute them so they end up working really well with the peaches and brie. We’re just gonna use one skillet tonight so pour the red onions in a bowl, wipe out the skillet and toss in the peaches. The juices from the peaches is going to start sizzling and smelling delicious, just toss these around in the skillet until they’re nice and warm and then put them in a bowl as well.

Now that you have all of your ingredients prepped and ready you can start to assemble the whole thing. We were being lazy last night so we decided to use our panini press instead of cooking them in a skillet. Check those out because they’re really nice for grilled cheese, melts, paninis, toast and anything else you can think of that needs heating up. Anyway, we layered the brie on first, some carmelized red onions on top of that, and then a nice layer of warm peaches on top. Oh and then a little more brie, just in case the first layer wasn’t enough. We then topped it all with another tortilla and put it in the press for a minute or two.

Once everything is nice and melted together, drizzle some of the honey on top and eat! This tastes really similar to the baked brie(probably because it has melted brie in it…), but is even easier to make. It is like having a fancy dessert for dinner!
