One of my favorite things to eat is some really good fried rice. You’ve just got a great combination of flavors that are all combined together perfectly. It’s also very easy to make. I finally got a bag of jasmine rice the other day and I’ve been craving fried rice so I decided last night to have that for dinner. I think the jasmine rice made this perfect, it was so much better than using white rice.

I used chicken tenders since they don’t have much fat on them and I marinated them in a bit of lime juice, soy sauce, and teriyaki sauce. Makes them taste delicious. Oh and a bunch of sesame seeds too! The rest of the stuff in the fried rice is pretty simple:

  • Jasmine rice(you kind of need rice for fried rice)
  • An onion sliced up
  • Peas and Carrots(I just use the frozen ones, they’re a whole lot easier)
  • Cayenne pepper
  • An egg
  • Vegetable oil

So cooking in a wok is extremely easy, it is pretty much like sautéing but the only hot part of the wok is the very center. This means that once something is finished cooking you can just push it off to the side and it will stay warm while you cook the other ingredients. Once the wok is warmed up with the vegetable oil in it, you add in the onions to sizzle for about half a minute. Next toss in the chicken in to cook for a bit.

Intermission: Since I went to World of Coke when I was in Atlanta last with my girlfriend, I have been looking for a drink called Manzana Lift. It is an apple flavored soda that is sold in Mexico but is really hard to find in the US if you don’t live near the border. It is possible to order it online but it is expensive and only comes in two liters, I want it in bottles! So yesterday when I was out, I found this which I thought would be similar. It actually did taste kind of like it but it was way too sweet and not tangy enough. My quest for the drink will continue.

Back to the cooking! Once the chicken is cooked, dump in some peas and carrots but make sure you use less than you think. Too many and it gets weird. Right after that, toss in the rice and pour in some more soy sauce.This will soak into the rice and give it a great flavor while you stir everything together.

As shown in the picture, you then push all of the rice and stuff off to the side and crack an egg into the wok. Make sure it doesn’t burn because it cooks very quickly. You want to make sure to not mix the egg into the rice until it is already scrambled because if it coats the rice the egg will make the rice really sticky and taste weird.

After the scrambled egg is mixed in, you’re done! Put it in a bowl and chow down on a delicious dish! It is incredibly easy to put together, once all the ingredients are chopped it takes almost 10 minutes to prepare.
